We had photography equipment set up at the mock training restaurant and we would stage and shoot plates of food right in the kitchen. We took hundreds of large format transparancies. The presentation and final shot had to be right-on the first time as Photoshop didn’t exist. Working for Mr. Sreak was one of the highlights of my career. So many memories throughout that time, loved the bread! We had a fire that started at the hostess stand I think it was in 1996. Customers were stuffing shrimp in their pockets before making a beeline for the door. I drove by the building the other day, looks like it might be coming down soon. It was "Unit #1" and a "company training store" until bought by a franchisee in late 1967. When it first opened, is was a brick floor, carry your tray to your table affair, and then they closed down briefly and remodeled into their final, full-service steak restaurant. I hired on as a dishwasher & bus boy, then worked my way up through the ranks as pit man, wheel cook, and eventually assistant manager.
